“SANSKRITI” – A Truly Indian Restaurant Concept

Hi Friends

I am Alok,a new rodinhooder. A sales person by profession, and an foodie by heart.I love to try out different food items .Some times its a little risky…………….also but , ya its a good adventure .From my childhood days ,I wanted to establish something of my own, but some how i couldn’t .

I had attended the the Openhouse in Gurgaon and that day I again started thinking that I should develop my idea further.

I am looking forward to open a restaurant /cafe where food items from different states of India will be served.

It will be different from other food joints, as here i am going to provide regional indian food items that are still confined to the particular states.The regional indian delicious food that are confined to a mother’s kitchen or available in some geographical boundary. 

“SANSKRITI” as the name itself defines it will be dedicated to rich Indian culture and food.

In my restaurant there will be 4 sections,East, West North and South

The Menu will include some authentic food items from that area.I will try to design the menu having food items from each state of that region.The items in menu will include some thing that is available only in that particular area till now, apart from the regular dishes.For example we have idli, dosa , vada etc from south india but there are lot many food items that we don’t find everywhere except that particular state. 

Apart from that there will be some good literature about the culture, food , Art,Dresses, any something more that truly reflects India.

People can come , enjoy the food, read more about the place, and at the same time can buy something unique for their home.

For Example:If you visit the North East Section, Then the things will be :

# Waiters will be dressed in some regional dress.

# Food that is served will be having the authentic taste of that region.

# The interiors will be reflecting the rich culture of that area, 

# Good literature for more detailed idea about the region.

# Dress material, artifacts, accessories and everything will give the feel as if you are sitting somewhere in north east. ,

 The idea is to bring whole india under one roof.

I welcome suggestions from all of you .Please drop in your valuable inputs.

Also I request our friends already working in the food industry to help me out with their suggestions and also if anybody is willing to join me in this venture.I would also encourage if we can have some good space available with somebody here.

  1. sounds like an interesting idea for tourists.

    as a local (in delhi) i love going to places like andhra bhavan. do i want to shop there? i’m not too sure. i’d rather do that kind of shopping at dastkar or dilli haat.

    BUT

    if this idea were to be done in another city where you don’t have the emporias/dilli haats of the world, in a place where you get lots of tourists, yes, it might work for sure.

    i’m not opposed to the idea of creating an environment of the region. regional places do very well – check vishala of a’bad to get an idea how well!!

    i see a few challenges – real estate – to accommodate 4 kinds of sections under one roof might be difficult. 

    what happens if the south indian section is overcrowded and no space left but your other sections are empty? 

    would having waiters dressed for diff sections be viable to you? if only one section is busy – what would the other folks do? or do they keep changing attire as per the needs??

    i’m just thinking aloud here. 

    i like the idea of “india under one roof” – i think initially don’t create sections as it will restrict you. have your entire place done up with different flavours of india and have waiters dressed from diff regions but don’t limit them – all of them can serve everyone. 

    also don’t forget in any family – everyone will have different choices. so the family should be able to order different dishes from different regions while being served by anyone in any section – i think that flexibility would work better. 

    my suggestion, once you get the food right, then get into retail. trust me, getting the food right will be a big challenge in itself. do an authentic traditional food place. not a multi-indian cuisine one. so limit the menu to a few authentic items from a few states – but do those REALLY WELL.

    secondly, i finally got down to reading the controversial foodpanda article and there’s a mention of a restaurant in greater noida called sanskriti

    “The Sanskriti restaurant in Greater Noida, which ran up massive bills, to the tune of Rs.4 lakh per month and has since been taken off on the platform.”

  8. Hmmmm – I wanna go to eat good food – NOT to see a Fancy Dress or a Play

    Those ‘village restaurants’ that came up near Ahmedabad and Jaipur etc did OK but then the ‘novelty’ died.

    I am not sure WHAT is your insight?

    is there food of Indian states thats missing in restaurants? Which ones?

    Its so nice of you that you showed interest in my project.

    Its true that everybody wants good food whenever he is dining out.My focus is on the regional food.

    This idea of providing the regional food came to my mind , when I read the Article in Times of India about how much people are looking for these food items when they go to dine out.As they only get this from their mothers’s kitchen.But as most of us are living in other cities for our jobs etc, we miss all this.

    Yes some popular regional food you can get in every restaurant, but there are lots of food items which you don’t get .

    For example you can get PAW BHAJI easily, but if you want to have GOAN PUI , you have to go to GOA.

    Like wise you will not get PORANPOLI, BISEBELE BHAT(MAHARASHTRA), PAKHAAL(ORISAA), THEKUA and LITTI (BIHAR) etc in normal restaurants.

    My focus is to provide this type of food at my restaurant.People belonging to those states want this type of food, 

    Regional dresses and literature are the ADD ONN features to provide good regional feel and ambiance.At the same time its my way to promote the BRAND, “INCREDIBLE INDIA”. 

    The idea is not to have a village restaurant , rather it is to open a place where PAN INDIAN CUISINE is offered.

    The project is still in the formation stage and I really need inputs from all of you to make it happen.
